Soft, hand-folded wontons in a clear savoury broth, finished with green onion. It is the first thing on the table on a cold Winnipeg night and the reason plenty of regulars walk through our door in January.
A good wonton soup lives or dies on the broth. Ours is kept clear and clean rather than heavy, seasoned enough to stand on its own but light enough that it opens the appetite instead of closing it. The wontons are folded so the wrapper stays tender at the edges while holding the filling together.
Soup is a core part of the Chinese-Canadian meal, and at Dragon Palace it is how most family dinners begin. Order a single bowl with lunch on Friday, or a large size to pass around the table before the mains arrive.
Broth is held hot and skimmed so it stays clear. Wontons are dropped in fresh for each order and cooked only until the wrapper turns translucent, because a minute too long makes them fall apart. The bowl is filled, green onion goes on top, and it heads straight out. For takeout we pack the broth to hold heat so it is still steaming when you open it.
Soup first, then the table fills in. Follow it with ginger beef and chicken fried rice, add deep-fried breaded shrimp to share, or finish with chicken chow mein for the whole table.
